Enjoy this refreshing Cold Soba Noodle Shrimp Salad that’s perfectly balanced and satisfying as an appetizer or entree.

Ingredients

For Salad

  • 9 oz soba noodles
  • 1 cup roughly chopped fresh cilantro
  • 1 cup thinly sliced red cabbage
  • 1 cup thinly sliced red bell pepper
  • 1 cup julienned or thinly sliced carrots
  • 1 cup julienned or thinly sliced snap peas
  • 3 scallions, thinly sliced
  • Sesame seeds, for garnish
  • Social Kitchens Professional Corkscrew Shrimp

 

For Ginger Soy Dressing

  • ¼ rice vinegar
  • 3 ½ tbsp vegetable or canola oil
  • 3 tbsp soy sauce
  • 1-2 tbsp honey, to taste
  • 3 tsp sesame oil
  • 1 tsp grated fresh ginger
Instructions
  1. Place all of the dressing ingredients in a blender or bowl, and mix together until blended.
  2. Cook soba noodles until al dente, about 3-5 minutes. When ready, immediately drain and rinse with very cold water.
  3. Prepare the shrimp according to package directions.
  4. In a large serving bowl, toss the noodles with the cilantro, cabbage, carrots, scallions, snap peas and prepared dressing. Add the shrimp and garnish with sesame seeds, scallions and sliced seaweed.
