Ingredients
  • 2 cups frozen corn, thawed
  • 13 oz can black eyed peas, drained and rinsed
  • 13 oz can black beans, drained and rinsed
  • 1 red bell pepper, finely diced
  • ½ cup chopped cilantro
  • ½ small red onion, finely diced
  • 2 tbsp fresh lime juice
  • 1 ½ tbsp apple cider vinegar
  • ¼ cup olive oil
  • 1 ½ tbsp honey
  • Salt and pepper
Instructions
  1. To a large mixing bowl add the corn, black eyed peas, black beans, bell pepper, cilantro, and red onion.
  2. In a separate small mixing bowl whisk together the lime juice, apple cider vinegar, olive oil, honey, and a generous pinch of salt and pepper. Whisk to combined.
  3. Pour the dressing over the top of everything and toss to combine. Taste and add more salt and pepper as desired.
