  • 3 cups broccoli florets
  • Olive oil
  • Salt and pepper
  • 2 cups chopped romaine
  • Caesar dressing
  • Parmesan wedge, to garnish
  • Lemon wedges, to serve
Instructions
  1. Preheat the oven to 425ºF.
  2. Place the broccoli on a baking sheet and drizzle with a generous drizzle of olive oil and a pinch of salt and pepper. Toss until all of the broccoli is evenly coated with the olive oil.
  3. Roast for 15-20 minutes or until the broccoli is tender but not mushy. Let cool for about 10 minutes.
  4. Add the romaine to a large bowl along with the roasted and cooled broccoli. Drizzle with desired amount of Caesar dressing and toss to combine.
  5. Pour onto serving platter and top with a generous grating of fresh parmesan. Garnish with lemon wedges.
