A new twist on the flavorful Buddha Bowl. Corkscrew shrimp offers a filling presentation and works will with the texture and flavors of this easy recipe.

Ingredients
  • Corkscrew Shrimp
  • 1 cup cooked brown rice
  • 1/2 cup carrot ribbons
  • 1/2 cup shredded red cabbage
  • 1/2 cup chopped kale
  • 1/4 cup cherry tomatoes, halved
  • 1 tbsp. thin sliced jalapeno
  • 2 tbsp. sliced scallions
  • 1 tbsp. chopped toasted peanuts
  • 1 lime, wedged
  • 1/4 cup Thai Peanut suace, house recipe or pre-prepared.
Instructions
  1. Deep fry Corkscrew Shrimp per instructions. Set aside
  2. Build the bowl starting with the brown rice and organizing the ingredients in sections.
  3. Finish by topping with Corkscrew shrimp, jalapenos, scallions and peanuts.
  4. Serve with side of Thai Peanut Dipping Sauce.
