A new twist on the flavorful Buddha Bowl. Corkscrew shrimp offers a filling presentation and works will with the texture and flavors of this easy recipe.
Ingredients
- Corkscrew Shrimp
- 1 cup cooked brown rice
- 1/2 cup carrot ribbons
- 1/2 cup shredded red cabbage
- 1/2 cup chopped kale
- 1/4 cup cherry tomatoes, halved
- 1 tbsp. thin sliced jalapeno
- 2 tbsp. sliced scallions
- 1 tbsp. chopped toasted peanuts
- 1 lime, wedged
- 1/4 cup Thai Peanut suace, house recipe or pre-prepared.
Instructions
- Deep fry Corkscrew Shrimp per instructions. Set aside
- Build the bowl starting with the brown rice and organizing the ingredients in sections.
- Finish by topping with Corkscrew shrimp, jalapenos, scallions and peanuts.
- Serve with side of Thai Peanut Dipping Sauce.
