  • 1 head romaine lettuce, chopped (or greens of choice)
  • 1 granny smith apple, diced
  • ½ cup finely diced red onion
  • 1/3 cup chopped pecans
  • 1/3 cup dried cranberries
  • 2 tbsp apple cider vinegar
  • ¼ cup EVOO
  • ½ tbsp dijon
  • ½ tbsp honey
  • Salt and pepper
  • Grated parmesan, to top

Instructions
  1. Prepare the shrimp according to package directions.
  2. Meanwhile in a large mixing bowl add the lettuce, apple, red onion, pecans, and cranberries.
  3. In a separate small mixing bowl whisk together the vinegar, olive oil, dijon, honey, and a pinch of salt and pepper.
  4. Pour desired amount of the dressing over the salad and toss to combine.
