Ingredients 
- ¼ cup extra virgin olive oil 
- 3 tbsp fresh lemon juice

- 6 cups mixed greens 
- ½ cup chopped sugar snap peas 
- ¾ cup frozen peas, thawed

This Mediterranean potato salad is designed for performance in high-volume prep and foodservice settings. It holds well under refrigeration, making it ideal for cold bars, grab-and-go cases, catering spreads and buffet service. The combination of creamy and crisp textures offers diners a satisfying side option that complements grilled meats, seafood or plant-based mains. ✨

Ingredients:
- 1.5 pounds baby red potatoes, cut in half 
- 1/3 cup mayo 
- 2 tbsp olive oil 
- 1 lemon, juiced 
- ½ tbsp Dijon mustard 
- ½ tbsp honey 
- Pinch salt and pepper 
- ½ cucumber, finely diced 
- ½ cup finely diced red onion 
- 2 tbsp freshly chopped dill 
- ½ cup chopped green olives 

Directions :
1. Place the potatoes in a large pot and cover with cool water. Place over medium-high heat and bring to a boil. Cook for about 15-20 minutes or util the potatoes are fork tender. Drain and place in the fridge to cool. 
2. While the potatoes cool whisk together the mayo olive oil, lemon juice, Dijon, honey, and a pinch of salt and pepper. 
3. Place the cooled potatoes into a large mixing bowl and add the cucumber, onion, dill, olives, and mayo dressing. Toss to combine, lightly mashing some of the potatoes, until desired potato salad consistency is reached.
