Ingredients:
- 1 cup pancake mix + ingredients required on packaging
- ¼ cup sliced scallions, plus more for garnish
- ⅓ cup shredded cheese
- Freshly cracked black pepper
Directions:
1. Prepare the pancake batter according to package directions, then stir in the scallions and shredded cheese.
2. Heat a nonstick skillet over medium heat and lightly spray with coconut oil or something similar. Pour about ¼ cup of batter per pancake and let cook for 2-3 minutes on the first side or until bubbles begin to form along the edges, then flip and cook another 1-2 minutes. Repeat with remaining batter.
3. To serve, place two pancakes on each plate and top with a sprinkle of green onion. Enjoy!
