Ingredients:
- 3 cups broccoli florets
- Olive oil
- Salt and pepper
- 2 cups chopped romaine
- Caesar dressing
- Parmesan wedge, to garnish
- Lemon wedges, to serve
Directions:
1. Preheat the oven to 425 degrees Fahrenheit.
2. Place the broccoli on a baking sheet and drizzle with a generous drizzle of olive oil and a pinch of salt and pepper. Toss until all of the broccoli is evenly coated with the olive oil.
3. Roast for 15-20 minutes or until the broccoli is tender but not mushy. Let cool for about 10 minutes.
4. Add the romaine to a large bowl along with the roasted and cooled broccoli. Drizzle with desired amount of Caesar dressing and toss to combine.

Ingredients:
- ½ tbsp olive oil
- 2 scallions, sliced
- 2 tbsp salted butter
- 1 tbsp all-purpose flour
- 1 cup whole milk
- Salt and pepper
- 16 oz bag frozen peas, thawed
Directions:
1. Heat a large skillet over medium heat. Once hot, add the olive oil. Add the scallions and saute for 2 minutes.
2. Add the butter to the pan. Once the butter is melted, whisk in the flour and cook for 1-2 minutes, stirring frequently.
3. Whisk in the milk and continue whisking as it thickens, about 3-4 minutes. The mixture should coat the back of a spoon. Stir in a pinch of salt and pepper.
